1 c. barley flour
1 egg
1/4 t. salt
Mix flour and salt. Beat egg, mix well. Add a little more flour if too dry or a little water if too dry. Knead for 10 minutes. Invert bowl over dough on a floured counter and let rest for 15 minutes. Roll the dough into ropes the thickness of a finger. Pinch little dime-sized pieces of dough from the ropes. Drop into boiling water, stir and boil for 8 minutes or until done as you'd like.
