Tuna Fish Croquets


TUNA FISH CROQUETS

1 can tuna fish (drained)
1 t. lemon juice
1 c. thick white sauce
    (3 T. butter,    1/4 c. flour,    1/4 t. salt,     1 c. milk        Mix together flour, salt, and butter in skillet on medium heat, while constantly stirring, add milk and stir until bubbly and thickened
Crush  Soda Crackers and add enough crumbs to above ingredients until you can form into balls. Roll mixture into ping pong size balls then roll balls in egg mix (1 egg and 1 T. water: beat well) then in finely crushed soda cracker crumbs.

           Bake at 350° until golden brown.                                 
 or... Deep frying is best!

Willie, have fun making these with your left over salmon!!!   We loved to eat these as kids.  My brothers loved to dip them in lemon juice. I preferred ketchup or ranch!   Hugs!
