This Spanish Rice can be made in 30-40 minutes!
1 T. oil
1/2
onion, chopped fine
½ garlic
clove, minced
1 c.
white or brown rice
1¼ c.
chicken stock OR (1-1/4 t. Chicken bouillon and 1-1/4 c. water)

T. tomato paste OR ½ c. diced fresh or cooked tomatoes
1/2 T. Taco Bell ‘Hot' Sauce (1 packet)
Pinch
of thyme
½ t. salt
½ t. salt
In a large skillet brown the rice in oil on medium/high heat. Add onion and garlic. Cook, stirring frequently, about 4 minutes, or until onions are softened.
In a separate sauce pan bring chicken stock
to a simmer. Add tomato paste, Taco Bell 'Hot' Sauce, thyme, and salt. Add rice mixture to
broth mixture and stir. Bring to a simmer. Cover. Lower heat and cook 15-25 minutes if using
white rice and 35-40 minutes if using brown rice. Turn off heat, let sit for 5
minutes. Serves 6 ( ____ c.), 20 min-prep, 20 min-cook
