 Grampa Mike Whittle’s Pancakes

299 g. (2-1/3 c.) All-purpose Flour

88 g. (1/2 c.) Indian Cornmeal

4.5 g. (3/4t) Salt

53 g. (11t) Baking Powder

70 g. (1/3c) Sugar

148 g. (3) Large Eggs

594 g. (2-1/3 c) Whole Milk

Grampa never measures when he makes pancakes.  When he made pancakes at my house on January 3, 2023, I weighed everything so we could try to make delicious, fluffy pancakes like he does. They still don't turn out as good as his.  Maybe it's the way he mixes the wet and dry ingredients just right. 

Dump all the dry ingredients in a bowl. Mix well and make a hole in the middle. Crack the eggs in the hole, break the yolks. Dump in the milk and mix so it's still lumpy, but flour is all mixed in with the wet.

Cook on a buttered hot skillet or griddle. Flip when bubbles pop on top and leave holes. Cook til the other side is done. Enjoy.
