Almost Chipotle Rice

I use a stove top pressure canner and cook at 15# pressure for 20 minutes. (1.5 gas mark on 3" burner) Let natural release 10 min.

2 c. brown rice

3.5 c. water

1/2 t. salt

1 bay leaf

1 t. canola oil

After it's natural release, release the rest of the pressure if it hasn't finished and stir in...

1 T. lime juice

1 T. lemon juice

2 T. dried parsley or cilantro
