Strawberry Milk Recipe

 Strawberry Milk - serves 6

1 c. (8 oz) or about 20 strawberries, fresh, frozen, or thawed

1 t. lemon juice

1 T. (22 g) honey

1 T. water

Simmer all in a pan. Smash into a syrup.  Add 2 T. to a cup with 3/4-1 c. milk (hot or cold).

Stir and enjoy

Clam Chowder

 Clam Chowder 1-15-25  serves 4

In a crockpot on low or in a pressure cooker, add:

11 oz (2 cans) Snow’s minced clams with juice

8 oz bottle Snow’s clam juice

½ c. apple cider or juice

4 medium spuds, cubed and with skins on

½ t. smoked paprika or 1/3 c. bacon pieces or 1/3 # bacon, chopped

1 ½ T. dry minced onions or 1 c. (1 medium) onion

1 t. salt

¼ t. pepper

1 bay leaf

1/3 t. thyme

 Cook __ hours in a crockpot or 6 min. at 15# pressure in pressure cooker with a 5-10 minute natural release.  Mash spuds to desired consistency.

In a glass bowl, while spuds are cooking, add:

1 c. milk  AND 1 c. cream

…. Or ½ c. milk and 12 oz can evaporated milk

1 T. butter

1/3 c. flour

Stir well and nuke until thickened, stirring well every 30 seconds.   Add to crockpot or cooker and stir well. Let simmer 5-10 minutes and enjoy with crackers, rolls, or in a bread bowl. Remove bay leaf :)

Zeke's Noodle Stroodle

 ZEKE'S NOODLE STROODLE 1-16-25

In a pan, mix all the following…  Cook until beef is cooked through.

1 lb. ground pork or beef

2 c. homemade chicken broth

½ small can mushrooms, minced

2 T + ¾ t. dried onion, minced

1 ½ t. chicken bouillon

1 t. garlic salt

½ t. rosemary

½ t. basil

¼ t. black pepper

¼ t. marjoram

1/8 t. crushed red pepper

1/16 t. thyme

6 oz. tomato paste

¼ c. powdered milk

     In a separate container, mix well then add to above mixture.

2 T.  cornstarch

¼ c. milk

Continue to stir over medium heat until thickened. 

Stir in 1 ½ c. shredded cheese and mix to combine.

Stir in 12 oz. pasta, cooked and drained.

STORY - When my kids were little, they didn't wanna eat Lasagna.  My momma suggested I just use different shaped noodles and call it something different.  "Noodle Stroodle" was invented and the kids loved it!   They like lasagna now too and I love my Crockpot Lasagna Recipe that cooks in 4 hours on low!

Almost Adam Witt’s Chicky Pot Pie

 Almost Adam Witt’s Chicky Pot Pie in a 10" cast iron skillet 1-20-2025


Prep… 2 pie crusts chilled in fridge (recipe below)

Prep…4 c. cooked chicken breast/thigh, shredded (**I used 2 pints of my cooked and frozen chicken in their broth)

  In a skillet, add…

1 T. chicken fat

3 T. unsalted butter

1 stalk celery cut in ½” chunks

3 small carrots, diced in ½” chunks

3 c. red spuds, diced in ½” chunks

    Cook/simmer until softened, about 5 minutes. Then add…

2/3 t. dry thyme

1 T. dry minced onion

2 t. salt

¾ t. dry minced garlic

2 t. black pepper

½ c. flour

2 t. chicken bouillon powder

    Stir well and cook 2 minutes.

Slowly whisk in

**2 pints chicken with broth

1 c. broth

½ c. heavy cream

   Whisk about 2 minutes, til a gravy consistency forms.

Stir in

2/3 c. grated parmesan cheese

¾ c. corn, drained

¾ c. frozen peas

1 T. dry parsley

Mix and let cool.

Put pie crust in cast iron skillet, add cooled filling, top with crust and pinch to seal. Slit for steam to vent. (I like to make dashed lines where we’re gonna cut the pie)  Cook 400 degrees 40-45 min. Let cool >15 minutes.

 

ALMOST ADAM WITT’S DOUBLE PIE CRUST  1-20-2025

2 c. (250 g) flour (120g all purpose flour and 113 g. debranned whole wheat flour)

½ t. (3g) salt

2/3 c. (148g) unsalted butter, shredded into flour and salt mixture

1/3 c. (70g. (cold navy bean puree)

6-7 T. ice water

(1/2 t. cinnamon and 1 T. sugar are optional add ins)

 Use a 10 c. mixing bowl. Mix ingredients with a fork until just begins to stick and forms a loose dough. Chill 1.5-72 hours wrapped tightly. Roll 2 crusts about 1/8” thick.  Place in pan, fill immediately with cooled filling. (If needed, place dough back in fridge to keep cool until ready to top with second crust.) Cover immediately with top crust and pinch to seal.  Bake as directed.  

[] try using a food processor to mix in the butter/beans but be careful not to over mix.

Almost Chipotle Rice

I use a stove top pressure canner and cook at 15# pressure for 20 minutes. (1.5 gas mark on 3" burner) Let natural release 10 min.

2 c. brown rice

3.5 c. water

1/2 t. salt

1 bay leaf

1 t. canola oil

After it's natural release, release the rest of the pressure if it hasn't finished and stir in...

1 T. lime juice

1 T. lemon juice

2 T. dried parsley or cilantro

Whittle Cookbook Favorites

Fish Tacos

 Fish Tacos serves 4 ....updated 6-10-26


12 6-inch corn or flour tortillas...2 tortillas per filet...  (Corn tortillas- dip in or spritz with water, stack on a plate and heat in microwave 30 seconds right before using.)

2 c. shredded Lettuce

1 c. shredded Cheese (we used Colby jack)

1/4 c. Red Onions, thinly sliced, or minced

Lime juice

6 tilapia filets – thawed

  FISH TACO SAUCEMix all ingredients. Let sit longer to help meld the flavors.

1/8 t. garlic powder

¼ dried jalapeno, powdered

1 T.  14 g. mayonnaise

5 T.  75 g. sour cream

   Dredging Liquid: 2 T. milk in bowl or on a plate

   Dredging Flour: on a plate

½ c. flour (whole wheat, all-purpose, corn meal, or a mix of em!)

1 ½ t. chili powder

½ t. salt

½ t. pepper

Heat up air fryer to 400 degrees. (Can cook in a skillet as well)

Dip the fish in milk, then flour mix, and *we like to dip again in milk and flour mix. Put on a plate.

Air fry 8 minutes. (Or cook in skillet 3 minutes per side)

While fish is cooking, spread sauce on heated tortillas. Add lettuce, red onions, cheese and ½ of a filet on each tortilla. Drizzle with lime juice. 

Eat immediately or put in skillet with a lid on low heat or leave in air frier to keep warm.

Fish Taco Sauce is good as a dip for veggies or chips.


Original Recipe...
6 Tilapia Filets, thawed 12 Corn tortillas, dipped in water and heated in microwave 30 seconds right before using. lettuce, shredded cheese, shredded lime juice 
 Fish Coating: Mix all ingredients. 1/2 c. flour 1 1/2 t. chili powder 1/2 t. salt 1/2 t. pepper Dip fish in 2-4 T. milk then in flour coating mixture. Air fry 400 degrees for 8 minutes. 
 Fish Sauce: Mix all ingredients. Let sit longer to help meld the flavors. 1 clove garlic, minced 1/2 jalapeno, dried and crushed 1/4 c. mayonnaise 1/2 c. sour cream 3 2x1/2"-inch strips of red onions, dried and crushed to a powder
 Spread fish sauce on heated tortilla. Put 1/2 fish on each tortilla. Drizzle with lime juice. Add lettuce and cheese.

Grill Master Chicken Wings - one serving

In a container, place:

1 2/3 t. soy sauce

1 2/3 t. Italian dressing

3 big wings

Marinate 3 hours and grill 18-20 min. over direct-medium heat

Sauce:

 2 1/2 t. butter, melted

1/4 t. soy sauce

2 1/2 t. Taco Bell hot sauce

Mix well and pour over grilled wings. Serve immediately.

Kristin's Instant Pot Beans

Instant Pot Beans!!

In an instant pot, put...

 4 c. hard, dry, rinsed, beans - any kind  (It will make about 12 c. cooked beans!)

10 c. water

2 cloves of garlic or 1/2 t. dry minced garlic

1 onion = 1/2 c. chopped = 8 t. dry minced onions

optional... 2 dried arbol chilis or 1-2 whole jalapenos

optional... add 1/4 t. dried thyme or other spices like curry, cumin, rosemary, etc)

Cook at pressure for 25 min. with a 10-60 minute natural release. Play around and see how soft you like your beans. Older beans will take longer to cook.

After they're as soft as you want, stir in 1 T. salt

Let cool and put in a big container in the fridge or in smaller containers and freeze until needed.

What type of Beans should I use?...  Beans go great with almost everything...   (I even used unflavored pureed white navy beans in my bread, pie crusts, and cookies).  Pick a type of bean that has a similar color to finished meal if you're trying to sneak it in ;)  White navy beans have the plainest flavor I've found.  

Rice and cheese (any kind)

Red beans and rice (red)

Jambalaya or Gumbo (darker)

Tortillas and cheese (any kind)

Use on a pizza (any kind. I love Cannellini/white kidney beans)

Spread on bread like sloppy joes (a darker color)

Blend up with mashed potatoes for more protein. (white)

Taco salad (a darker color)

Chili (any)

Bread (white navy)

Texas Caviar (black beans)

Lasagna (darker color, unless it's a chicken lasagna, then use lighter)

Breakfast burritos (any)

Baked beans (white Navy)

I even tried them in homemade caramels.... the results surprised me! :) It had the same flavor, yet the texture was just a bit grainy :)

Creamy Instant Pot Mac n Cheese


Creamy Instant Pot Mac N Cheese

 3 1/2 c. water

1 lb pasta

2 t. salt

Cook in Instant Pot (IP) for 3 minutes at 15 lb. pressure with a quick release.

Put it on a low sauté mode and add:

2 T. butter

1/2 t. dry mustard or 1 t. prepared spicy brown mustard

1 (12-oz) can evaporated milk or cream

6 oz. shredded sharp cheddar cheese

Optional: 1# cooked and seasoned hamburger

Stir until smooth. Turn off and serve.  

Add milk or water if too thick until you reach the texture you like.

If you have leftovers, reheat with extra milk or water until you reach the texture you desire.

Instant Pot Corn Chowder

 2 T. cubed spuds

1 onion, chopped

1 t. salt

2 cans of corn, with juice

1/4 t. pepper

1/2 t. marjoram

3-4 c. milk

1/2 c. flour

Add all but milk and flour to instant pot.  Cook 9 minutes, with a quick release.  Meanwhile, make a white sauce of the milk and flour in the microwave, stirring every 30 seconds.   Add to pot after pressure is released and combine thoroughly.


Red Enchilada Sauce

Based on the recipe from Marguerite Payne's recipe in "Boarding the Ark Today"

2 T. shortening, bacon grease, or butter
2 T. flour
8 oz tomato sauce
3 c. water
1/2 c. medium picante sauce 
1 T. white vinegar
1 t. salt
2 T. sugar or 4 t. honey
1/2 t. cumin
1/2 t. oregano
1/16 t. garlic salt

Mix all in a pan. Heat, stirring, until the sauce has thickened to the consistency of thin gravy.  Simmer 5-10 min. before serving.
