Red Enchilada Sauce

Based on the recipe from Marguerite Payne's recipe in "Boarding the Ark Today"

2 T. shortening, bacon grease, or butter
2 T. flour
8 oz tomato sauce
3 c. water
1/2 c. medium picante sauce 
1 T. white vinegar
1 t. salt
2 T. sugar or 4 t. honey
1/2 t. cumin
1/2 t. oregano
1/16 t. garlic salt

Mix all in a pan. Heat, stirring, until the sauce has thickened to the consistency of thin gravy.  Simmer 5-10 min. before serving.
