I wanted a side-by-side comparison of homemade bread with two types of grain (Hard White Wheat and Kamut). I wanted a small loaf, no kneading, minimal clean up and... I learned I can make bread quickly in a food processor so... I used the smallest loaf recipe here in the picture.
In a food processor, put
~1 c. (120 g) fresh milled flour (or just use what you've got!)
2.6 g. (1/3-1/2 t.) salt
1.3 g. (1/3 t.) yeast (I used 3/4 t. and it rose really quick)
Pulse it twice.
Measure into a container (I used the part of food processor that works as a plunger)
84 g. (~6 T.) cool water (or use milk, broth, juice, liquid from beans or spuds)
12 g. (~3/4 T.) oil (or use applesauce, butter, coconut / avocado oil, cashew butter, bacon grease!)
10 g. (1/2 T.) honey (omit or use sugar, applesauce, pureed fruit or veggie, or other sweetener.)
Turn on the food processor and pour in the liquid. Let it run 40 seconds - YEP!! it's super fast.
Drop the dough into a greased wide mouth pint jar (I sprayed with cooking spray)
Cover (I used an upside-down plastic container) and let raise til doubled then put the jar(s) in a COLD oven. Turn it on to 350 degrees and cook 25-30 min.
Let cool 5-10 minutes, or until the bread easily drops out of the jar!
[] I want to experiment with different grains and adding cinnamon and raisins, blueberries, cheese and jalapenos, and oh, so much more.
[] I want to try it in a 3 c. wide mouth mason jar because it has straight edges too.
[] I'll even try cooking it in the microwave (I'm guessing it'll only take 3 minutes... I'll update ya later)
My Grandma Whittle used to make shaped breads when I was little... these remind me of her!...Love ya Grame!
