30 oz black beans, drained
1 t. cumin
1 c. corn, drained
1 c. and 3/4 c. bread crumbs, 3/4 c. is set aside
2 c. tomatotes, finely diced
2 scallions or green onions, sliced
1/2 t. chili powder
1/4 t. salt
Mix all and pulse in food processor if needed. Separate into 50 balls and flatten. Press balls into 3/4 c. bread crumbs. Place on greased cookie sheet. Bake 425 degrees for 20 minutes. Serve with salsa or guacamole.
